Grilled Chicken 3 Bean Chili - Created today
Grilled Chicken 3 Bean Chili
Ingredients
2 to 2.5 pounds of boneless, skinless chicken thighs
½ of a large onion
10 oz. can of Rotel tomatoes
1 small can of tomato paste
1 bell pepper diced and seeded
1 stalk of celery diced
5 cloves of fresh garlic
10 to 12 oz. can of small red beans
10 to 12 oz. can of black beans
10 to 12 oz. can of pinto beans with jalapenos
1 teaspoon of oregano
Salt and pepper to taste
1 teaspoon of ground cumin
2 teaspoons of Tandoor Masala
2 tablespoons of chili powder
Instructions
Grill the boneless, skinless chicken thighs seasoning with Tandoor Masala on both sides. If the chicken is still rare, that will be okay because you will be cooking the chicken some more with the other ingredients. After you have sufficiently browned both sides of the chicken on the grill, cut the chicken up into cubes and place in a large skillet. While cooking the chicken, add the sliced bell pepper, celery, onion, and garlic. After browning the onion sufficiently, add the cans of beans, tomato paste, and rotel tomatoes. Also, add the various spices. Salt and pepper to taste.
